Marymount Bakehouse opens at Upper Thomson with sourdough

Sourdough fans would be pleased to know that popular bakery and cafe Marymount Bakehouse has opened their second outlet at 9 Thomson Ridge, making their homecoming launch.

Look forward to an extensive sourdough-centered menu that goes beyond their well-loved bread, ranging from expanded brunch offerings and seasonal specials to their handmade sourdough pastas and levain pies.

For the uninitiated, Chef Ian Ferdinand Chong founded Marymount Bakehouse after honing his skills in some of the industry’s most respected kitchens globally, including the Michelin-starred Domaine de Châteauvieux in Satigny, Switzerland.
Known for their gorgeous sourdough loaves and focaccia, the bakery first started as a home-based business in 2020, and has since expanded to two full-fledged cafes, with their other outlet located at Farrer Park.

The must-try here is none other than their sourdough loaves, all naturally leavened and slow-fermented. Amongst the classic Marymount House Loaf ($15++) are their new creations, such as the Pain de Campagne ($15.50++), a French-style country loaf made with dark rye and wholemeal flour. Also joining the loaf hall-of-fame is Not A Croissant Sourdough ($20++), a hybrid of flaky, buttery croissant-like layers and the chewiness of a traditional sourdough loaf.
Up your sourdough game and take your taste buds around the globe with other interesting flavours, including the Oolong Chocolate Chip Sourdough ($20++), Tomatillo Salsa Verde ($17.50++), The French Onion Soup Sourdough ($23++) and more.
Do note that flavours and quantities will vary based on the bakes of the day, as the bakehouse bakes its selection of 15 sourdough loaves in small batches and rotates them throughout the month—specially for the Upper Thomson outlet.

Besides loaves, the bakehouse will also debut new additions to their levain pie line-up: 4 Cheese Asparagus (from $18.90++) and Corn & Crab Chowder Pie (from $20.50++). The former combines an asparagus nest and Coppa Scotch Egg alongside four decadent cheeses: Philadelphia cream cheese, Gorgonzola, stracciatella and parmesan. The latter takes a play on a corn chowder pie, layered with crab meat, crab tartare quenelle, smoky bell pepper puree, and burnt corn.
Fret not, for favourites such as the Apple Rhubarb Pie (from $16.90++) and Hamburg Wellington ($38++) are still available on the menu.

Adding to their new pasta lineup is the latest Brown Butter Boquerone & Sourdough-Crusted Seabass ($28++), starring brown butter pasta, artisanal salted Spanish anchovies, fresh lemon zest, and crispy sourdough-crusted seabass.
For avid brunch-goers, the brunch menu will not disappoint. Feast on the juicy and satisfying Beef Tartare on Bone Marrow (The MMBH Way) ($30++) featuring tare-glazed bone marrow topped with hand-cut beef tartare, capers, grain mustard, mustard seeds, chives, and crispy onions, served with sourdough bread crisps, sourdough shokupan, potato chips and a lightly dressed arugula salad.

If beef’s not your thing, try the Parma & Burratina ($27++) instead, consisting of confit cherry tomatoes, pickled green tomatillo, housemade sourdough croutons, watermelon, Parma ham, and topped with burratina. The dish comes with a bright and refreshing gazpacho made from red tomatoes, red pepper, and watermelon.
