Edge is a popular buffet restaurant at Pan Pacific Singapore

In case you haven’t noticed, Eatbook has been busy reviewing many of the top hotel buffets in Singapore, including Colony and Lime Restaurant. Therefore, it would be remiss of us not to stop by Edge at Pan Pacific, another juggernaut in the scene.

Edge’s buffet is certainly on the pricier side—the most affordable option, the Lunch Buffet (available from Monday to Friday), costs $72++ per person. But does the food live up to that price?

The cardinal rule of international buffets is to enjoy the seafood section first. So we made a beeline for the seafood on ice section, where we were greeted by Tiger Prawns, Crawfish, White Clams, Sea Conch and more.

We found the snappy tiger prawns and sea conch to be excellent—just the kind of freshness and sweetness you’d expect from a quality seafood on ice section. But our favourite was easily the Half Shell Scallops, which were wonderfully plump and juicy. That delicate, briny flavour it had was hard to resist, too, and we kept going back for more.

Located just beyond the seafood on ice is the sashimi and sushi station, a hot favourite for fans of Japanese cuisine.

We’re happy to report that the sashimi was one of the better ones we’ve tried at a hotel buffet. Whether it was the buttery salmon belly or the tender tuna, every slice was delicious. And perhaps that was to be expected, since looking around, many tables were hoarding plates of these fresh seafood.

On to the meat dishes. Edge has a carving station full of tantalising options, including the Slow-roasted Beef Striploin with Roasted Root Vegetable, pictured above, and the Herb-roasted Lamb Leg with Lamb Jus and Mint Yoghurt.

Sadly, the beef striploin was a let-down. Rather than succulent, it was dry and tough to chew through. Even the red wine reduction lacked that savoury richness you’d expect. The lamb leg also suffered from similar issues, though the second batch we tried was considerably juicier.

The Chinese meat section fared better. Both the Roasted Chicken and Roasted Pork Belly hit the spot, especially the latter with its shatteringly crisp skin. We also enjoyed how thickly they sliced the pork belly, which gave the juicy pork a good bite that contrasted the crispy exterior.

The sourdough pizza, which is hand-stretched then fired up on the spot, was delicious as well. We tried the House-made Hungarian Salami Pizza and Margherita Pizza, and enjoyed their thin, crispy crust, as well as the savoury cheese and toppings. Not spectacular, but they did the job well.

The Indian cuisine station, meanwhile, was a bit of a mixed bag. Some items, including the Paneer Mutter, impressed with their rich, creamy sauces and well-balanced spices. Others, however, fell flat—meat options such as the Chef’s Signature Butter Chicken again suffered from being too tough and dry.

One dish that was an undisputed hit was the Singapore Yong Tau Foo Nyonya Laksa. With its wonderfully rich, coconutty broth, silky noodles, fresh yong tau foo, and plump prawns, we found ourselves going back for seconds. Going for the carbs is far from the meta when it comes to buffets, but who can resist a good bowl of laksa?

Edge has a vast dessert section, and it was practically impossible to cover them all without risking diabetes. Some of our favourites include the Apple Crumble, Strawberry Mousse Cake, Assorted Nyonya Kueh, and Ondeh Swiss Roll. There’s also a Chocolate Fountain for those with a particularly keen sweet tooth.

Ambience at Edge

As you’d expect from Pan Pacific Singapore, Edge looks and feels fantastic. It is both spacious and expertly designed, with clearly delineated stations that prevent congestion during peak hours. This is a good place to bring a loved one for a special occasion—if you’re willing to pay the hefty fee, that is.
Edge is an eight-minute walk from Promenade MRT Station.

As far as hotel buffet lunches are concerned, Edge does a fantastic job. The restaurant offers a wide variety of international fare that is, for the most part, delectable, though there are some slight misses.
