Yakitori fans who have been eyeing a Tokyo trip just to snag a seat at Torimitsu, you can hold off on booking that flight. The 13-seat Tokyo restaurant is setting up a pop-up in Singapore, and it kicks off on 28 October 2026.

Torimitsu will take over Tanuki Raw at Orchard Central for three months, with just 15 seats for the whole run. It is the first time the restaurant has cooked outside Japan.

Back home, Torimitsu is a tiny spot in Tokyo’s Ushigome-Kagurazaka neighbourhood, with nine counter seats and four table seats. It opened in November 2022, and tables tend to be snapped up well in advance, so even a dedicated trip to Tokyo does not guarantee you a spot.

The man behind it is Chef and owner Takuhei Yamada. He trained in the Torishiki style of yakitori before developing his own approach, and it shows in how he grills. His skewers are on the chunky side, cooked close to a very hot fire of binchotan charcoal and wood.

Chef Yamada shifts each skewer nearer to or further from the flames depending on the cut, so the outside picks up a deep char and smoky aroma while the inside stays juicy.
There is also one quirky detail: he adds pesticide-free grapevine branches to the charcoal, which gives the chicken a light, subtle fragrance.

As for what you will be eating, the pop-up serves a dinner course (price TBD) made exclusively for this collaboration. It is a shorter format than what you would get in Tokyo, with different cuts of chicken grilled over charcoal so you can taste the range of textures and flavours. According to Chef Yamada, the menu was designed to carry across Torimitsu’s cooking methods while fitting into Tanuki Raw’s space. The full list of dishes is yet to be confirmed.
